Chicken breast recipes?

My schedule is pretty hectic these days, but I'm trying to stick to eating as much unrefined, natural food as possible. The one issue is that I don't really have time to cook meat every day, so I was wondering if anyone has any simple recipes for chicken that I can, say, make at the beginning of the week in bulk and then keep in the fridge for the rest of the week. I tend to stay away from cooking red meat, but if anyone has any similar ideas for fish, that'd be good, too.

Simple enough is to make chicken stir-fry, I use frozen vegetables from costco. I can't think atm or I'd suggest a few others.

A whole roast chicken can go pretty far. I try to make one on Sunday night (except when it is super hot out)... then I buy it made from my fave butcher.

Take a whole chicken.

Pre-heat oven to 350ish

Stuff chicken with onions, some orange (no peels), garlic and ginger.

Put on a rack in a pan and stick in oven for an hour or so.

hey, presto... chicken for week.. easy peezy

I found a real simple recipe for chicken in Men's Health Magazine.
Here it is:

3 tablespoons miso
1 tablespoon sesame oil
1 tablespoon peanut oil
pepper to taste.

Mix above ingredients. Take 1.5 lb boneless chicken breasts and rub the mixture on the breast. Smear liberally and then let sit ~30 minutes to marinade. Cook with your favorite method. I use an indoor electric grill. Optionally after cooking you can garnsig with chopped walnuts.

I like a chopped chicken breast with a ts of mayo a cup of cilantro and a generous helping of sriracha Vietnamese rooster sauce
