I’m a newbie here, but wanted to share one of my favorite, but sadly little-known, nutrition books: Life Without Bread by Wolfgang Lutz and Christian Allen. This book does such a great job of explaining why a carbohydrate-restricted, high-fat diet is healthful, with scientific accuracy and important detail, but still in terms that us laypeople can understand. I found it especially interesting to learn about how excess insulin creates a cascade of hormonal effects, with our thyroid hormones, sex hormones, growth hormone, etc. There’s also good information on the link between carbohydrates and diabetes, heart disease, cancer, and other ailments. It’s a very fascinating read.
